I have been busy coming up with ways to work their citrusy goodness into all manner of baking. This is not a difficult task, as I am utterly in love with lemon cakes/tarts/biscuits/cookies…
Being winter in Australia meant that it wasn’t long before my thoughts turned to warming, calorific puddings, served with cream. I have always loved a classic, old fashioned pudding – it is one of the reasons why I am so enamoured with the cold weather.
Lemon delicious ticks all the boxes, plus it is completely irresistible. The smell of this lemon dessert baking is enough to make even the most ‘oh-no-I-could-not-possibly-eat-dessert’ guest practically demand a bowl.
If you don’t already own one I suggest buying a Microplane grater to remove the zest for baking recipes. These graters remove just the rind, not the pith which can be bitter.
GATHER:
150g unsalted butter, melted, cooled slightly
3 eggs, separated
finely grated rind of one large or two small lemons
1/3 cup lemon juice
¾ cups caster sugar
3/4 cup self-raising flour
1 1/2 cups milk
LET’S GET TO IT:
Preheat oven to 180°C and grease a two litre capacity ceramic or glass dish and place inside a large metal roasting pan. Fill the kettle.
In a large bowl whisk together the butter, sugar, milk, rind, juice, flour, and egg yolks until combined. Set aside.
In a bowl of electric mixer with whisk attachment beat eggwhites on high speed to soft peaks stage.
With a metal spoon, fold a quarter of the beaten eggwhites into the bowl containing the lemon mix. Once it is incorporated fold the rest of the eggwhite in until it is just mixed – try not to knock the air out of the eggwhites.
Using a large silver spoon, spoon the batter into baking dish.
Boil the kettle.
With the dish in the roasting pan pour the boiled water until halfway up the side of pudding dish.
Bake for 25 to 30 minutes or until golden and just set and serve immediately.
